An Elegant Greek Chicken Dinner in 60 Minutes: Chicken Saganaki with Broccolini & Dessert!

Описание: My Chicken Saganaki is a play on the Greek classic shrimp saganaki. Chicken is cooked in a flavorful tomato and feta sauce and topped with scallions. So easy and delicious. As a side, I made some garlicky broccolini that was ready in under 10 minutes. For dessert, we have berries with cream and chocolate. Also ready in 10 minutes. This entire menu is perfect for a weeknight family meal and elegant enough to serve at a fancy dinner party.

For the chicken Saganaki:
Ingredients
1-1 and ½ pounds boneless skinless chicken breast, cubed
1/4 cup olive oil
1 small onion (216 grams/half a pound) finely chopped
3-4 garlic cloves, sliced
14.5 ounces (411g) canned tomatoes, pureed (make sure they’re unsalted and no flavors added)
1/2 cup water
1 teaspoon dried oregano
½ teaspoon sugar, or more
pinch of crushed red pepper flakes
salt and freshly ground black pepper, to taste
1 cup crumbled feta cheese
4-6 scallions, finely chopped
Instructions
Preheat the broiler on high.
Place the chicken cubes on a tray or in a shallow bowl and season both sides with salt and black pepper.
Heat a 10-inch (26 cm) ovenproof skillet over medium-high heat. Add olive oil and 1/3 of the chicken cubes making sure to not crowd the pan. Sauté the chicken 1-2 minutes per side until lightly brown. Transfer onto a plate and do the same with the remaining chicken.
Lower the heat to medium-low and cook the onions and garlic for about 8-10 minutes or until slightly golden, translucent, and soft.
Add tomatoes, water, sugar, oregano, crushed red pepper flakes, black pepper, and a little salt. Take care not to add too much since the feta cheese that will be added in the end will be salty.
Cook the sauce until it reduces and thickens.
Put all of the chicken into the pan, top with crumbled feta cheese, and bring to a boil.
Transfer the pan (if it is oven-proof) to the oven on the center rack and cook for about 5-8 minutes or until the cheese melts, the sauce is bubbly and slightly charred.
Garnish with scallion slices and serve.
Serve with hearty, toasted bread or over pasta.

Broccolini:
Ingredients
3 bunches broccolini (a little over a pound)
3-4 tablespoons olive oil
5-6 garlic cloves, sliced
Salt
7-8 small radishes, halved
Instructions
Bring a pot of salted water to a boil.

Trim the bottom third of the stem of the broccolini and discard it.

Boil the broccolini for 2 minutes. Drain the broccolini and set it aside.

In a cast-iron skillet or a large pan, heat the olive oil over medium heat.

Add the garlic and cook until golden. About 2 minutes.

Add the broccolini and saute for 2 minutes. Toss it in the oil and garlic.

Remove from the heat and add the radishes. Serve.

Dessert:
Ingredients
fresh berries (strawberries, blueberries, blackberries, raspberries, etc)
1- 2 teaspoons of granulated sugar
1 cup heavy cream
1-2 tablespoons confectioner's sugar
1 teaspoon pure vanilla extract
semi-sweet chocolate or your favorite chocolate
Optional garnish: shortbread cookies
Instructions
Make the whipped cream

In the bowl of a tabletop mixer that has been fitted with the whisk attachment, combine the cream, sugar, and vanilla extract. Whip together until thick and creamy.

Melt the chocolate in the microwave or over a double boiler. Mix together until smooth and shiny.

Place the berries in a bowl and sprinkle with some granulated sugar. If using strawberries, cut them into slices or quarters. Mix together.

Add a layer of berries to a cup or a mini trifle bowl. Top with a dollop of the whipped cream. Add some more berries on top and then drizzle chocolate over the berries. Top with a cookie and serve.
