Taiwanese 3 Cup Mushroom! One of my favourite taiwanese dishes! I'm delighted to share my veganized recipe with all of you! Hope you all enjoy it
This recipe makes 2 servings
Ingredients
200g Lion's Mane Mushroom
150g medium firm tofu
3 slices ginger
2 cloves garlic
1 dried chili
1 tbsp cooking oil
1 handful thai basil leaves
Sauce ingredients
1 tsp sugar
1 tbsp soy sauce
1/2 tsp sesame oil
1 1/2 tbsp dark soy sauce
3 tbsp water
2 tbsp Chinese cooking wine
Instructions
1. Place the cooking oil, vegetable oil, ginger, garlic, and red chili into your wok over medium heat. Let the aromatics infuse the oil for a couple minutes.
2. Then turn up the heat to high, and add the lion's mane mushrooms to the wok all in one layer. Sear the mushrooms until golden brown on both sides. Then add tofu and all the sauce ingredients.
3. Stir to combine well. Turn the heat down to medium and simmer for 2-3 minutes until sauce has thickened and coat the mushrooms and tofu.
4. Stir occasionally so that the sauce doesn't burn. Add in your Thai basil and fry another minute until it’s wilted. Serve with white rice!
