INGREDIENTS FOR SALSA:
6 lbs skinned tomatoes
1 large onion or about 2 cups
5 jalapeno peppers or a mix to the equivalent
6 cloves garlic
1/3 to 1/2 bunch chopped cilantro if you like cilantro
1 cup 5% vinegar or 1 cup lime juice
1 packet of Mrs. Wages Salsa mix or 3/4 cup if measuring from the big tub
Follow directions in the video and process in boiling water bath canner for 40 minutes. Let the jars rest in unheated, uncovered canner for 5 minutes before removing to a towel covered surface. Let rest overnight before checking for seal, labeling, and storing in a cool and dark cupboard.
INGREDIENTS FOR CHICKEN AND WHITE BEAN CHILI:
2 lbs boneless, skinless chicken diced in cubes
1 large green bell pepper
1 medium onion diced
1 quart chicken stock
2 tsps chili powder
2 tsps ground cumin
1 tsp salt
1 tsp pepper
1/2 tsp paprika
1/4 tsp cayenne, omit if you don't like the heat
8 oz of salsa
2 cans white cannelloni beans, drained and rinsed
1/4 cup minced cilantro if you like the flavor
Follow directions in the video for cooking. Serve it with crackers, cheddar cheese, or a dollop of sour cream.
