Instead of nori seaweed, we use a thin sheet of seasoned fried tofu to wrap the rice and fillings.
Ingredients:
Makes 20 pieces of Inari Sushi Roll.
• 5 pieces aburaage (thin fried tofu, 13x6cm/5.12x2.36in each)
Note: Rinse the aburaage with boiling water to remove excess oil.
• 500g/17.64oz cooked rice
• 1 1/2 tablespoons Japanese black vinegar
• 200mL/6.76 fl oz(US)/7.04 fl oz(UK) water
• 2 tablespoons shiro-dashi (light-colored seasoned bonito stock)
• 1 tablespoon sudaki-to (cane sugar)
Note: Sudaki to (素焚糖) is an unrefined 100% cane sugar from the Amami Islands of Japan.
• 1 tablespoon hon-mirin (authentic sweet rice wine)
• 1 tablespoon low-sodium soy sauce
• 150g/5.29 oz spinach
• 5 sticks imitation crab
For an atsuyaki-tamago (thick, rectangular omelet):
• 2 eggs
• 1 tablespoon shiro-dashi (light-colored seasoned bonito stock)
Note: Mix the eggs and shiro-dashi, then roll the mixture layer by layer into a thick, rectangular omelet.
For garnish:
• A few flower-cut carrot slices
