Sourdough Pretzel Rolls
This recipe is adapted from Amy Bakes Bread
Dough:
250 grams leaven 430 grams water 20 grams salt
850 grams bread flour see recipe notes, about 6 cups70 grams unsalted butter (I used 50g Olive Oil and 20g Honey)
I mixed the dough and gave it 1-2 stretch and folds. I let it sit on the counter overnight to bulk ferment.
The next morning, I split the dough into 100g pieces and formed them into balls by pinching the edges underneath themselves. I placed a damp towel over them and let them proof until they were nice and puffy.
I boiled some water, then added baking soda (6 Tbs to 8 Cups) and boiled each one for 60-90 seconds. I scored them, sprinkled salt on them and baked them for 15-20 minutes at 475F. They were delicious and I will definitely make them again!
