This soft pretzel recipe is a smash! It will make 12 standard soft pretzels. Let me know what you think of it in the comments!
Be sure to prepare the sweet stiff starter about 12hrs BEFORE starting the dough. Mix all of the starter ingredients until fully combined. Cover and let it rise until peak, and mix the dough when the starter has reached peak.
Sweet stiff starter
50g 100% hydration unfed sourdough starter
66g water
120g flour
20g sugar
Dough
390g bread flour
245g water
45g honey or maple syrup
40g butter
9g salt
All stiff starter
Oven is preheated to 400F, and pretzels baked 12-15 mins!
