Next, they fell in love with fish cakes, crispy golden bites bursting with flavourful herbs and fresh fish, often enjoyed with a tangy pepper sauce. Mark’s favourite? The iconic Bajan rum punch, a perfectly balanced cocktail that embodies island vibes.

Barbados also excels in street food. The duo devoured juicy pork cutters (sandwiches on salt bread) and freshly grilled seafood from Oistins Fish Fry, an unforgettable Friday night feast.

For dessert, they couldn’t resist conkies, a sweet treat of cornmeal, coconut, and pumpkin steamed in banana leaves.
