Ingredients
🍗 Chicken Tenders
• 1½ - 2 lb chicken tenders
• 2–3 cups neutral oil (for frying)
Wet Marinade
• 1 cup (240ml) buttermilk
• 1 tbsp soy sauce
• ½ tsp salt
• ½ tsp smoked paprika
• ¼ tsp black pepper
• ½ tsp garlic powder
• ½ tsp onion powder
Dry Coating
• 1 cup all-purpose flour
• 3 tbsp (30g) cornstarch
• 1 tsp baking powder
• 1 tsp salt
• ½ tsp smoked paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
🍊 Orange Glaze
• 2 tbsp butter
• 2 garlic cloves, minced
• ¾ cup fresh orange juice (about 2–3 oranges)
• Zest of ½ orange (optional, for a stronger orange flavor
• ¼ cup (75g) honey
• 2 tbsp soy sauce
• ½ tsp ground ginger
• ½ tsp smoked paprika
• 1 tsp cornstarch + 1 tbsp water (slurry)
Instructions
1️⃣ Marinate the Chicken
In a large bowl, combine chicken tenders with all wet marinade ingredients.
Cover and refrigerate for 2–4 hours (or overnight).
2️⃣ Prepare the Coating
In a separate bowl, whisk together all dry coating ingredients.
Add 2–3 tablespoons of the marinade into the flour mixture and mix with a fork until crumbly.
3️⃣ Bread the Chicken
Remove tenders from marinade, letting excess drip off.
Coat each piece thoroughly in the dry mixture.
Place on a wire rack and let rest 10–12 minutes (this step is key for crispiness).
4️⃣ Fry
Heat oil to 350°F (175°C).
Fry tenders in batches for 3–4 minutes per side, until golden and cooked through.
Transfer to a paper towel–lined tray.
5️⃣ Make the Orange Glaze
In a saucepan over medium heat:
1. Melt butter.
2. Add garlic, sauté 30–60 seconds until fragrant.
3. Stir in orange juice, zest, honey, soy sauce, ground ginger and smoked paprika.
4. Bring to a gentle simmer.
5. Add cornstarch slurry and cook 2–3 minutes, stirring, until glossy and thick.
Remove from heat.
6️⃣ Assemble
Place fried tenders in a large bowl.
Pour orange glaze over the chicken and toss gently to coat.
Sesame Soy Dipping Sauce
Quick mix:
• 3 tbsp soy sauce
• 1 tsp rice vinegar
• 1 tsp honey
• ½ tsp sesame oil
