Here’s my Blackberry sour beer. Possibly adding some Malic acid to get a more sour finish.
Same recipe as my RasBlue sour (raspberry and blueberry) but just with blackberries instead 🤤😋
What’s in it?
Malts:
2kg Best ale malt
250g Munich malt
250g red malt
Fruit:
2kg Blackberries (frozen, thawed and crushed to get the juice out) added for a 80C Hop-stand. Removed again while the wort is filtered and yeast added. Then replaced into the fermenter
Hops:
10g - into the 1st runnings and a 60min boil
10g Hop-stand with the fruit at 80C
Other:
I intended to add 1/2 crushed proctafloc 15mins to the end of the boil (will help clarity)
Pectolase - 2 teaspoons for this size batch
Yeast:
Full packet of Philly sour yeast
Schedule:
60min total mash
40min at 65C
20mins at 69C
Wanted to mash out at 76C (but had to go sort daughters medical stuff)
Sparge at 76C
Start gravity 1.060
Fermenting at 24C for approx 5 days then check gravity
Check gravity again 24hrs later. If it’s the same as the previous day it’s time to bottle 😉
