This is a very common side dish found at many local parties, hawaiian plate lunches, and Luaus. My dad never made this for sale at his store but often for family get-togethers or parties.
I used the following ingerdients
Started out with salting 1 pound of Salmon - Salt Salmon process below
1 Medium Sweet Onion
2 Large Stalks of Green Onion
3 Large Roma Tomatos
To make Salted Salmon, heavily coat the salmon with sea salt, Hawaiian Salt, or Kosher Salt. Wrap the salmon in a plastic wrap or place it in a plastic/glass container. We cure the Salmon in the fridge for 1 to 2 weeks. The less cure time the softer the salmon will be.
It can be eaten by itself as a side dish, with tortilla chips, as a salad dressing, or as an omlette (wife's favorite way).
