In Hawaii, Salted Salmon is used in Lomi Lomi Salmon and, in some cases, added to Lau Lau. Super easy to make, and only has 2 ingredients. Butterfish can be salted this way also.
I usually make about 2 pounds at a time. The longer you let the Salmon cure, the harder and saltier it becomes. I usually cure the Salmon for anywhere between 2 to 4 days. I vacuum seal and freeze what I don't use.

Hawaiian Salt (Coarse ground Kosher salt can be used)
