If you don't have a planetary mixer at home, knead bread dough by hand and increase the timing (with 5 min more) shown in the video above.
With patience and following the recipe you will get the best results.
And remember: your room temperature for dough proofing should be between 25°C and 36°C.
Very often I proof my dough in the oven as I keep door closed for the duration of the proofing time.
Get thermometer for baking and you’ll never have to guess at it again, it gets easier when you have the right tools, temperatures are extremely important while working with yeast and dough.

Tuscan Bread Recipe
500 g flour type 00 (preferably made in Italy)
280 - 310 ml of warm water (20 - 27 °C)
13 g fresh yeast
20 g granulated (white) sugar
25 ml olive oil
US metrics
4 Cups US 1.27 US Cups (temperat. 68°F-80.6°F)
1½ teaspoons fresh yeast
1 teaspoon white sugar
4-5 tablespoons olive oil
Bread making process:
1. Assemble Bread Ingredients
2. Dissolve the yeast to activate it
3. Add remaining ingredients and mix
4. Mix dough in a mixer for 8 min.
5. Grease your bowl and cover with a cling, let it proof for 2 hours. After 2 hours put back the dough in the mixer and mix for 5-6 min.
6. Cover with a cling film and let it rest for 30 min.
7. Shape bread dough, decorate and cover with a towel for 40 min
8. Bake in a preheated oven for 25-30 min. at 210 °C.
9. Let your bread cool for 30 min. after baking and then cut it.
