My Parsnip & Pancetta Linguine
In this video, I’m showing you how to balance the sweetness of parsnips with the saltiness of pancetta. Sounds like a weird combo?! Try it and let me know what you think in the comments! :)
This recipe is my personal adaptation of Gennaro Contaldo’s parsnip tagliatelle. I’ve made a few tweaks, including swapping the fresh pasta for linguine and adjusting the seasoning, but the result is as incredible as you would expect.
Ingredients (for 2):
160g linguine
1 medium parsnip
1 small onion
100g Italian unsmoked diced pancetta
3 dried chillies
Fresh thyme
Grated Parmesan
2 tbsp olive oil
Unsalted butter
