Ingredients

For cooking rice
2 cups rice
8 cups water
2 tbsp oil
1 tsp rice

2 tbsp ghee
1 tbsp cumin seeds
15 cashew nuts
salt to taste
5 green chilies, slit
2 tbsp mint leaves, chopped
2 tbsp coriander leaves, chopped
1 sprig curry leaves
1/2 tsp pepper powder

Method
For Cooking Rice
soak 2 cups basmati rice for 20 minutes
now in a large vessel pour 8 cups water
add 1 tsp salt & 2 tbsp oil
once the water comes to a boil, add in soaked rice
mix well and boil for 8 minutes.
drain off the water from basmati rice
pour cold water to prevent from further cooking. keep aside for 20 minutes

now in a large kadai heat 2 tbsp ghee
add 1.5 tbsp cumin seeds, 15 cashew nuts
roast for 2 mins on low flame
add 5 slit green chilies, 2 tbsp chopped mint leaves, 2 tbsp chopped coriander leaves, 1 sprig curry leaves, 1/2 tsp pepper powder
cook for 2 mins
add cooked basmati rice
mix gently
further, cook 2 mins
Jeera Rice is ready

Serve hot with
