Transcript: I’m Father Dominic with another baking secret from the Bread Monk. Oh my. It’s not uncommon for beginning bakers or even experienced ones to accidentally add too much flour during the kneading process and end up with a stiff dough that will yield a dry, crumbly loaf. Now in a stand mixer, it’s easy to add a couple of tablespoons of water or milk and let the mixer do its thing. But what if you’re kneading by hand? Well, you can just flatten the dough on the countertop, you can just spread it out with your hands, or use a rolling pin, either way, and then spread about a tablespoon of water or so, don’t have to worry about measuring it, just kinda get it on there, spread it around, roll it up inside, and start kneading. Now, you may need to do this several times and it’s gonna be a great big sticky mess before it will be the kind of dough you want.
