Vegetarian Chashushuli with Seitan
Ingredients (3–4 servings):
Seitan — 300 g (10.5 oz)
Onion — 2 medium
Tomatoes (fresh or canned) — 4 medium (or 400 g / 14 oz)
Bell pepper — 1 medium
Garlic — 3 cloves
Fresh cilantro — 1 bunch
Utskho-suneli (or khmeli-suneli) — 1 tsp
Tomato paste — 1 tbsp
Hot pepper (optional) — 1/2 small
Salt and black pepper — to taste
Vegetable oil — 2 tbsp
Water or vegetable broth — 100 ml (1/2 cup)

Instructions:
1. Prepare the seitan:
Cut the seitan into large cubes. If you prefer a slightly crispy texture, pan-fry it in hot vegetable oil until golden brown.
2. Sauté the vegetables:
Slice the onion into half-rings and cut the bell pepper into thin strips.
Heat the oil in a deep skillet or saucepan and sauté the onion until translucent. Add the bell pepper and cook for another 3–4 minutes.
3. Add the tomatoes:
If using fresh tomatoes, blanch them in boiling water, peel off the skin, and chop them finely.
Add the tomatoes (or canned tomatoes) to the pan and stir well.
4. Build the dish:
Stir in the tomato paste, spices (utsikho-suneli, black pepper, and hot pepper), and minced or pressed garlic. Mix well.
Pour in the water or vegetable broth and bring to a simmer.
5. Add the seitan:
Place the seitan into the sauce. Reduce the heat, cover, and let it simmer for 10–15 minutes to absorb the flavors.
6. Finish it off:
Chop the cilantro and stir it into the dish. Cover and let it sit for another 5 minutes.
7. Serving:
Serve hot with bread, flatbread, or rice.
