Bring the vibrant flavors of Georgia to your table with *Ajapsandali*, a hearty and colorful vegetable stew made in just one pan! This dish is packed with tender eggplants, potatoes, peppers, and tomatoes, all simmered with aromatic herbs and spices. Perfect as a main course with flatbread or a side dish for grilled meats or kebabs.
Ingredients
2 medium eggplants, diced
2 large onions, chopped
3 garlic cloves, minced
A handful of green onions, chopped
3 bell peppers (any color), diced
2-3 medium potatoes, diced
3 ripe tomatoes, diced (or 1 tbsp tomato paste if needed)
150 ml tomato juice
1 tsp Khmeli-Suneli (or coriander)
1 tsp salt
Black pepper to taste
Fresh parsley and cilantro, chopped
Instructions:
1. Prepare the eggplants: Dice 2 eggplants and sauté them in a pan with a bit of oil until golden. Remove and set aside.
2. Cook the aromatics: In the same pan, sauté 2 chopped onions*, a handful of *green onions*, and *3 minced garlic cloves until soft and fragrant.
3. Add the peppers: Stir in 3 diced bell peppers and cook for a few minutes until slightly softened.
4. Return the eggplants: Add the sautéed eggplants back to the pan, mixing them with the peppers and onions.
5. Cook the potatoes: Make a space in the center of the pan and add *2-3 cubed potatoes*, stirring gently to combine everything.
6. Incorporate the tomatoes: Add 3 diced tomatoes (or mix in 1 tbsp tomato paste if the tomatoes aren’t juicy), along with *150 ml of tomato juice*, *1 tsp salt*, *1 tsp Khmeli-Suneli (or coriander)*, and black pepper to taste.
7. Simmer: Cover the pan and let the dish cook on low heat for *15-20 minutes*, or until the potatoes are tender.
8. Garnish: Finish with a generous sprinkle of freshly chopped parsley and *cilantro*.
