The next stop of our gastronomic tour is Lake Bánki, where Dános Tomi prepares various asparagus dishes. 🤗
WHITE ASPARAGUS CREAM SOUP
Ingredients:
• white asparagus
• sugar
• salt
• lemon
• vegetable broth
• heavy cream
• white pepper
• fresh sprouts
First, remove the woody ends then peel the asparagus, before putting them in hot water, which we previously seasoned with salt, sugar and lemon juice. It approximately takes 15-20 minutes to cook them with the lid on. It’s fine if the tips hang out of the water as it is going to soften properly. Chop the tips off when cooked and put them aside for later. Roughly chop the asparagus stalks.
Find a large pan, add the asparagus stalks, then add a dipperful of its cooking water and some vegetable stock. Use a hand-held blender to mix it while adding heavy cream, bit by bit.
If the asparagus is woody a few strands could remain in the mixture. You can simply strain it.
Season it with salt and pepper until just right. Once done, add the asparagus tips to the soup. Serve with fresh sprouts and a drizzle of olive oil on top.
GRILLED ASPARAGUS WITH BESAMEL AND ROASTED BACON
Ingredients:
• garden asparagus
• olive oil
• butter
• flour
• milk
• nutmeg
• salt
• black pepper
• bacon
• cheese
Simply break off the woody ends of the asparagus, then pour some olive oil on top of it, season it with salt and pepper. Roll them around thoroughly and get ready to grill!
For the béchamel put 50g of butter into a saucepan with 25g of plain flour, mix it well, then add 3dl of milk slowly. Stir constantly until getting the perfect texture, then carefully season it with salt and a little nutmeg as well.
Grill the asparagus for approximately 4-8 minutes – depending on the heat.
Dice up some bacon and roast it in a pan in the meantime.
Once grilled, put the asparagus onto a plate, pour the béchamel on them, add the roasted bacon, and some grated cheese as well.
