Quick Fix Chicken Curry on RuVi’s Countertop

Ingredients
500g - 1kg chicken thighs and breast meat
Dried red chilies chopped
Rampe
Curry leaves
Lemongrass
Ginger chopped
Coriander leaves chopped
Garlic chopped
Chili powder
Curry powder
Chopped large tomato
Tomato ketchup
Lime juice
Worcestershire sauce - 2 tbsp
Olive oil - 2 tbsp
Method
Make a fine paste using the garlic and coriander, marinate the chicken meat for at least 15 minutes
Heat pan with olive oil and lightly temper the curry leaves, rampe, ginger, lemongrass and dried red chilies on low heat.
Add in the marinated chicken and mix well with the rest of the spices and sauces. Add two cups of hot water to the same marinating bowl and same to the pan. On fluctuating heat between medium and high let it simmer for 30 mins.
Finish off by adding a bit of chopped coriander for more flavor and enjoy with hot rice or some good freshly baked roast paan.
