Modha (Baramundi)
Olive oil
Fish sauce
Coriander leaves chopped
Crushed Garlic
Lemongrass
Lemon or lime juice
Nai Miris to taste
Salt
Method
Get your Modha filleted and deboned
Let it rest in room temperature
Combine...
Olive oil, Fish sauce, Coriander chopped, Crushed Garlic, Lemongrass, Lemon or lime juice, Nai Miris and Salt to taste in a blender or mortar and pound until you get a thick sauce
Massage the fillet of Modha generously with the marinade and let it rest for 30 to 60 minutes in room temperature
Garnish with coriander, lemon slices, garlic and bake in an oven pre heated to 200 •c for 45 minutes.
Best served with a salad or steamed rice anytime day or night!
