Chicken Enchiladas: about 6 boneless skinless chicken thighs or 3 breasts, 2 pinto or 2 black beans drained and rinsed, 1 can of corn drained, 1 can of diced tomatoes with the sauce, 1 can of diced green chilis, 1 can of red or green sauce, taco seasoning, garlic salt and pepper to taste. Crockpot low for 8 hours.
Beef Stew: 1 pound of beef stew chunks, 24 oz of beef broth, 3 medium carrots peeled and chopped, 3 celery stalks chopped, 1 small can of stewed tomatoes not drained, 1 onion diced, 2 bay leaves, 1 TBS thyme, pepper and garlic salt to taste, 1 TBS minced garlic. Crockpot low for 8 hours.
Southwest Chili: 2lbs ground beef (cooked), small can of tomato paste, 2 cans of fire roasted tomatoes, 3 cans of beans drained and rinsed, 1 onion, 1 green bell pepper. Warm up in the crockpot or stove top for 1 hour.
Mississippi Pot Roast: 2lbs of beef chuck roast, ranch seasoning and brown gravy to taste, 1 stock of butter, handful of pepperoncini's, splash of water or beef broth. Crockpot low for 8 hours
