Ingredients:
• 1 onion, chopped
• 2–3 cloves of garlic, minced
• A small piece of fresh ginger, finely chopped
• 1 medium pumpkin, peeled and chopped
• 1 carrot, chopped
• 4 cups vegetable broth
• Salt and pepper to taste
• Cottage cheese (for blending and topping)
• Pumpkin seeds (for garnish)
Instructions:
1. Sauté chopped onion in a little olive oil until soft and golden.
