Soft, fluffy homemade crescents filled with walnuts, apricot jam, and fragrant rose preserve. A beautiful combination of texture and flavor — perfect for school snacks or a cozy treat at home.
Ingredients:
For the dough:
• 500 g all-purpose flour
• 300 ml kefir (3.25%)
• 50 g sugar
• 50 ml sunflower oil
• 1 whole egg + 1 egg yolk
• Pinch of salt
• 10 g vanilla
• 10 g dry yeast
• 1 tsp grated lemon zest (optional)
For the filling:
• 100g apricot jam + 100g rose preserve
• 120 g finely chopped walnut
Baking:
• Preheat oven to 360F (180°C)
• Bake 25 minutes or until golden

Instructions:
1. Prepare the yeast (if needed):
• Mix dry yeast with a small spoon of sugar and a little lukewarm kefir (optional) to activate for 5 min.
2. Make the dough:
• In a large bowl, combine kefir, sugar, oil, whole egg + egg yolk, vanilla sugar, salt, and lemon zest.
• Gradually add flour, in order, mixing gently.
• Knead until a smooth, elastic dough forms.
3. Rest the dough:
• Cover and let it rest in a warm place until it doubles in size (~1 hour).
4. Prepare the filling:
• Mix rose preserve, apricot jam, and finely chopped walnuts in a bowl.
5. Shape the crescents:
• Roll the dough into a circle (around 12inch/30cm).
• Cut into triangles.
• Place a spoonful of filling at the base of each triangle.
• Roll each triangle from base to tip to form a crescent.
6. Bake:
• Place crescents on a parchment-lined baking sheet.
• Bake in preheated oven at 360F (180°C) for 25 minutes, until lightly golden.
7. Cool & serve:
• Let cool slightly before serving.
Store in an airtight container.
