I love chicken pie, it's perfect for most seasons and so easy to make it your own according to what your family loves. Add a salad for a refreshing twist, some steamed veggies for those cooler months or just enjoy it as is. It's also an easy dish to adjust according to your schedule. You can make everything from scratch or make use of a few store bought ingredients. For this video I only did a crust on top but you can add pastry to the bottom and sides of the pie too. If you do decide to go this route you will have to blind bake the pastry before adding the filling and the top layer pastry. Other ways to make this recipe quicker and easier include using roast chicken bought from the shops or leftover chicken from the night before. You can use cream instead of milk, add some thyme, remove the mushrooms or make your own pastry, it's really that easy and versatile.
Recipe:
• About 1 kg chicken thighs and drumsticks
• Salt to taste
• Pepper to taste
• 1 tbsp olive oil
• 3 garlic cloves minced
• 200g mushrooms sliced
• 1 onion diced
• 1 green pepper diced
• 50g packet cream of mush soup
• 500ml milk
• About ¼ cup chopped fresh parsley (optional)
• 400g puff pastry
• 1 egg beaten
Start by seasoning the chicken with salt and pepper on both sides. Heat the oil in a large frying pan over a medium high heat. Once the oil is hot add the chicken pieces, cook until the chicken is golden on both sides. Remove the chicken from the pan and set aside. Using the same pan add the garlic, mushrooms, green pepper and onion. Remove the skin from the chicken, cut skins into strips and add it to the mushroom mixture. Continue to fry until the onions are translucent and mushrooms start to brown. Add the mushroom soup powder to the pan and half of the milk, stir until the soup is mixed through, add the remaining milk and continue to stir until it thickens. Chop the chicken into chunks or shred before adding it to the frying pan. Mix through with some fresh parsley. Pre heat the oven to 180°C. Spray a large oven safe dish or deep pan with some cooking spray. Add the chicken mixture to the dish and spread evenly. Cover the mixture with the puff pastry, cut off any excess dough or fold in the edges. Make sure the entire surface is cover with the pastry. Brush the the pastry with the egg. Place in the oven and bake for 30 minutes or until pastry is cooked through and golden.
