The Ultimate Carnivore Chick-fil-A Sandwich 🍗🔥

Ingredients
Fried Chicken Fillet:
2 boneless, skinless chicken thighs (or breasts, pounded to ½-inch thick)
½ cup heavy cream
1 tsp Redmond’s salt
½ tsp white pepper
½ tsp black pepper
½ tsp paprika (optional for color)
½ tsp MSG (optional, enhances Chick-fil-A-style flavor)
Carnivore Breading:
1 cup pork rind crumbs (finely crushed)
¼ cup grated Parmesan cheese
½ tsp Redmond’s salt
½ tsp black pepper
Egg Wash:
2 eggs
2 tbsp heavy cream
Cooking Oil:
Beef tallow or lard (for frying)
Carnivore Bun:
3 egg whites (room temperature)
1 egg yolk
2 oz cream cheese (softened)
½ tsp beef gelatin powder (optional, for structure)
½ tsp Redmond’s salt
Instructions
🔥 Step 1: Brine the Chicken
Mix heavy cream, salt, white pepper, black pepper, paprika (if using), and MSG in a bowl.
Add chicken and marinate for at least 1 hour (overnight for max juiciness).
🔥 Step 2: Prepare the Breading
In one bowl, whisk eggs + heavy cream for the egg wash.
In another bowl, mix pork rind crumbs, Parmesan, salt, and black pepper for the coating.
🔥 Step 3: Bread & Fry the Chicken
Heat beef tallow or lard in a deep pan to 350°F (175°C).
Remove chicken from brine, dip in egg wash, then coat thoroughly in the pork rind mixture.
Fry for 3-5 minutes per side until crispy and golden brown. Internal temp should be 165°F (74°C).
Drain on a wire rack to keep it crispy.

Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
Beat egg whites with a hand mixer on high speed until stiff peaks form (about 3-4 minutes).
In a separate bowl, mix softened cream cheese, salt, beef gelatin powder, and egg yolk. Stir until smooth.
Gently fold the yolk mixture into the egg whites without deflating them.
Scoop onto the baking sheet, forming 4 bun-sized rounds.
Bake at 325°F for 15-18 minutes or until golden and firm.
Let cool for 5 minutes before using.
