Day 10 with the new sourdough starter, and it is ready to bake.
This is the first bake using the new starter, beginning with the autolyse step five hours after feeding.
For this bake, I am using Cassie Junior as my control starter. Cassie Junior comes from my older, established starter, and I am using her to compare how a new starter and an older starter behave during the new starter’s first bake. This allows me to see differences in strength, fermentation, and structure side by side.
The goal here is not perfection. It is observation. This bake is about understanding how maturity affects performance and what to expect when baking with a young starter for the first time.
