A fun, delicious way to switch things up on Taco Tuesday! Crunchy, fried tacos... Chicken Fajita style.
INGREDIENTS:
Soft Tortilla shells, corn or flour
1lb of Chicken thighs (or ground chicken)
1 pkg of Fajita seasoning
1 bag of shredded cheese
1/2 yellow onion
1/4 green bell pepper, diced
1/4 red bell pepper, diced
1/2 block of cream cheese, room temp.
Cooking Oil
Toppings of your choice (guacamole, pico de gallo, sour cream etc)
NOTES:
Cook chicken and veggies in fajita seasoning, about 15-20 minutes.
Add cream cheese and shredded cheese to fajita mixture, mix well
Assemble tacos
Coat a pan in about 2-3 tbs of cooking oil. Fry tacos on medium-high heat for about 3-5 minutes per side or until filling is melted and shells are golden brown and crispy.
These would also be great the classic taco way! Just replace the chicken fajita mixture with taco meat (ground beef or turkey and taco seasoning) and mix in shredded cheese (omit the cream cheese).
Plate and serve with your favorite taco fixins!
