Ingredients: (Makes 24 cookies)
Caster Sugar : 1/2 Cup (Use 2-3 tbsp extra, if you want them to be on a more sweeter side)
Butter : 1/2 cup
Egg : 1
Egg white : 1
Desiccated Coconut : 1 cup + additional 1/4 cup (If you are adding extra sugar, you can skip the additional coconut)
GF All Purpose Flour : 1 cup
GF Baking Powder : 1 tsp
Recipe:
In a large bowl, we will add 1 egg plus 1 egg white, then 1/2 cup caster or powdered sugar, 1/2 cup butter (i.e, arnd 113 gms), whisk them using a hand whisk or a hand mixer. Since this doesn't require a lot of effort, so i prefer using hand whisk. Also, the sugar used will make these cookies mildly sweet, so if you want them to be on a more sweeter side, feel free to add 2-3 additional tbsp of sugar.
Once all combined, keep it aside. And take a separate medium sized bowl, add 1 cup desiccated coconut, 1 cup GF APF/Maida, 1 tsp GF Baking powder and mix them together. If you are using Unsalted butter, add 1/4 tsp of salt to the dry mix.
Once mixed, transfer the dry ingredients into the wet mix bowl and combine using a fork, to form a sticky dough.
If you didnt add extra sugar and used only 1/2 cup like me, then the dough at this time would look more like a batter, so you might need to add 1/4 cup additional coconut, to have this form a sticky dough. I didnt add it in the beginning, as every flour mix acts differently, so if we add 1/4 cup coconut in the beginning, we might have stiff dough, which isnt what we would be looking for.
Once combined, keep it in the fridge for about 40-50 mins.
After 50mins, the dough is still sticky, but pliable, so we can form different shapes using our hands. You can take a small portion, roll it into a ball and then flatten it to form a cookie. You can also just take a small portion, without doing anything keep it on the cookie sheet, and with soft hands, give it a round shape. However, i like to give it a rough look like this, as it gives the cookies the look of the coconut cookies.
Ok, so now our cookies are all ready to go in the over but keep them in the fridge for about 30mins before putting them in the oven And Before you take them out, pre-heat your oven at 180 degrees celsius for 10mins. And then bake them at the same temperature for 20-25mins until the top is all brown.
The cookies are all ready, look at them, they have expanded in the oven, so are bigger now. They are crispy and will remain like that if you put them in an airtight container in a cool and dry place. Although, I am sure they will all be over in just a few days :)
