South Indian Uttapam with a North Indian Paneer Masala...with so much of diversity, why not make use of it! 😉😋😛
Serves- 3
Ingredients-
Uttapam Batter
1 cup cooked rice
1/2 cup riceflour
1/4 cup semolina(sooji)
Salt- to taste
1/2 tsp baking soda
2 tbsp curd
Hot water- as needed
Paneer Masala
1 tbsp refined oil
1/2 cup chopped onions
1 tbsp ginger garlic paste
1/2 cup chopped tomatoes
1 cup tomato puree
1 tsp garam masala
1 tsp red chilli powder
Chopped green chillies- as per taste
Salt- to taste
1/2 cup paneer cubes
Chopped coriander- to garnish
1 tbsp refined oil
1 tsp ghee
Water- to sprinkle for steam
Method-
Puree a bowl of cooked rice.
In a bowl, add pureed rice, rice flour, semolina (sooji), baking soda, curd, hot water & whisk well to make a smooth batter.
Let it rest for 15- 20 mins
Heat refined oil in a pan.
Add chopped onions, ginget garlic paste, choppd tomatoes, tomato puree, garam masala, red chilli powder, chopped green chillies, salt and mix well.
Let the spices cook well.
Add paneer cubes and mix well.
Heat refined oil in another pan, add the uttapam batter and ghee. Let it cook.
Add the paneer masala on top.
Sprinkle some water on the pan for steam and cover with lid.
Leave for 2 -3 mins to cook.
Garnish with chopped coriander on top.
Serve hot with chutneys.
Chutneys-3 types
• Dry red chilli, garlic & curd
• Coconut, garlic & green chilli
• Coriander, green chilli & garlic
Method-
Blend all the ingredients well for each chutney-
• Blend dry red chilli, garlic, curd to a fine paste.
• Blend coconut, garlic and green chilli to a fine paste.
• Blend coriander, green chillies and garlic to a fine paste.
