30 MINUTE Caramel Apple Pie Cupcakes! (SOFT & FLUFFY)

In this video, I'll be showing you how to make Caramel Apple Pie Cupcakes. They are warm, soft and cinnamon-y! The brown sugar topping gives a perfect crunch and added sweetness.
Makes 12 cupcakes
Topping:
1/2 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
2 tablespoons unsalted butter, melted
Apple Cupcakes:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup sugar
1/2 cup unsalted butter, melted
1 large egg
1/2 cup milk, room temperature
1 cup Gala or Golden Delicious apples, peeled and cubed (1 medium apple)
Caramel Drizzle:
12 soft caramels
1/2 tablespoon milk
INSTRUCTIONS
Preheat oven to 375°F. Line a muffin pan with 12 paper liners.
To make the topping, stir together brown sugar, flour, cinnamon and melted butter. Set aside.
Peel and chop the apple into small chunks.
In a medium bowl, whisk together flour, baking powder, cinnamon, salt and sugar.
In a large bowl, whisk the melted butter, egg and milk.
With a wooden spoon, stir in the dry ingredients until just combined. Add in the cubed apples, do not over-mix.
Fill each muffin liner almost to the top, then smooth the tops out a bit.
Use your hands to sprinkle chunks of the brown sugar topping over each cupcake batter.
Bake for 15-18 minutes or until a toothpick inserted in the center comes out with no crumbs.
Cool in the pan for 10 minutes.
Meanwhile, melt the caramels and 1/2 tbsp. milk in the microwave for 30-45 seconds. Quickly drizzle over the top of the cupcakes.
Transfer the cupcakes onto a wire rack to cool for at least 5 minutes.
