Broccoli Cheddar Soup
Ingredients:
3 tbsp of butter
1/2 of a white onion (diced)
1/4 cup of self-rising flour
1 cup of beef broth
2 bags of broccoli florets
( roughly 20oz )
1, 12 oz can of evaporated milk
1/2 tbsp of paprika
salt & pepper to taste
1 8 oz of extra sharpe cheddar ( shredded )
Instructions:
In a large pot melt the butter over low heat.
Add the diced onion and sauté until slightly browned.
Add the flour and beef stock then stir vigorously to remove any lumps.
Add the broccoli , then stir to coat before adding milk, paprika, salt and pepper.
Simmer on low heat 15 minutes or until the broccoli florets are soft.
Add the shredded cheese and stir until the cheese has melted.
Remove from heat after the cheese has melted to keep from scorching.
