Hush Puppies
Ingredients:
1 cup of yellow cornmeal
1/2 cup of all-purpose flour
1 tsp of baking powder
1 tbsp of granulated sugar
1/2 tsp of salt
1/2 tsp of garlic powder
2 tsp of onion powder
4 tbsp of minced onions
1 large egg, slightly beaten
1 cup of Buttermilk
Instructions:
Combine dry ingredients first, as follows...
In a bowl, Combine the cornmeal, all-purpose flour, baking powder, sugar, salt, garlic powder and onion powder.
Mix until completely combined.
Now add the wet ingredients ,as follows...
Add the egg and butter milk, followed by the minced onions.
Stir until just combined. Do not over mix.
Add cooking oil to a deep frying pot. Heat to 350°F . Do not over heat the cooking oil.
If the oil is smoking then its too hot and needs ajusting. Hush puppies need to cook to an internal temperature of 165°F.
Cook for 2-3 minutes or until golden brown.
Yields about 2 dozen hush puppies.
