Simple Fruit Crumble
Prep Time: 10 minutes
Bake Time: 45 minutes
Total Time: 60 minutes
Yields: 16 servings
Ingredients:
For the crumble topping:
2 cups all-purpose flour (Aisle 6)
½ cup lightly packed brown sugar (Aisle 6)
½ tsp. kosher salt (Aisle 6)
½ tsp. ground cinnamon (Aisle 6)
10 TBSP unsalted butter, cut into cubes (Dairy)
For the fruit filling:
2 ½ pounds mixed fruit such as blueberries, peaches, strawberries, raspberries, or blackberries (Produce)
½ cup granulated sugar (Aisle 6)
2 TBSP cornstarch (Aisle 6)
½ tsp. kosher salt (Aisle 6)
1 tsp. vanilla extract (Aisle 6)
Directions:
Preheat oven to 375 degrees. Lightly coat a 9x13 baking tray with cooking spray and set aside.
In a medium bowl, whisk together the flour, brown sugar, salt, and cinnamon for the crumble topping. Add the butter and toss to coat the pieces, then, using a pastry cutter, fork, or clean hands, work the butter into the dry ingredients until mixture is coarse and crumbly. Set topping aside. To prepare the filling, toss the fruit, sugar, corn starch, salt, and vanilla extract in a large bowl until fruit is evenly coated. Pour fruit into prepared baking dish and spread into an even layer. Sprinkle topping evenly over the fruit and bake in preheated oven for 45 – 50 minutes, or until fruit is bubbling and topping is deeply golden brown. Remove from oven and let stand for 5 minutes before serving with freshly whipped cream or vanilla ice cream.
Frozen fruit can be used in place of fresh fruit, if desired, simply add 10 minutes to the baking time.
If topping starts to become too brown, cover with foil for remainder of baking to avoid scorching.
For individual crumbles, fill sprayed ramekins ¾ of the way with fruit, sprinkle with topping and bake at 375 degrees for 35 minutes.
