Full recipe:
250g Thick white rice noodles
3 cloves garlic
handful raw prawns
2 eggs lightly beaten
2 tbsp fish sauce
juice 2 limes
2 tbsp brown sugar
1 cup bean sprouts
2 tbsp roasted chopped peanuts
2 finely sliced spring onions
1 tsp dried chillie flakes
Chinese chives handful (kuchai)
Fresh coriander to garnish
Start by mixing together the fish sauce, lime juice, brown sugar in a small bowl. Heat a little oil in wok, when it's hot add the garlic and then the prawns, cook quickly until the prawns are nearly cooked, then add the chicken and noodles and stir everything together. Push everything to the side of the wok and make a space in the centre to cook the eggs. Pour eggs in and leave to cook in the centre of the pan.. Once it's nearly cooked on the bottom you can give it a good stir into the noodles. Next pour in the bowl of sauce, then the bean sprouts and spring onions. Stir fry for another minute or until it's all well mixed and serve straight away with a good sprinkle of crushed peanuts on top.
