Anna is making a traditional Victoria Sponge cake with her grandmother's recipe.
Victoria Sponge:
3 eggs
170 grams self raising flour
1 tsp baking powder
170 grams caster sugar
170 grams soft margarine
1 tbsp warm water
butter and icing sugar for the butter cream filling
Put the flour, baking powder, sugar, marg and eggs into a bowl. Beat until smooth, then add water and mix. Grease and line 2 sandwich tins (I have these), add the mixture equally and then bake for 170°C for 20/25 mins. Mix butter and icing sugar for the filling, layer on top of one side when the cake has cooled, follow with the jam and then sandwich the two.
