Sharpening a very dull knife on my guided sharpener with Edge Pro Matrix stones and polymer strops

Описание: This knife hasn't been sharpened after 3 years of use so I figured doing so was worth a video. It has a HAP 40 core which is a hard, fine grained, crisp steel that sharpens very well with diamonds. I am using my 1"x4" stones and strops since that is what the stone holders were set for. They are identical to the Edge Pro Matrix stones but mounted on smaller holders. The only difference in use is they take about 60% more strokes to achieve the same polish due to their shorter length.
