炸鸡柳菜谱 Complete Recipe:
鸡柳处理 Chicken Preparation:
鸡胸肉 Chicken Breast 250g
玉米淀粉 Corn Starch 5g (1 teaspoon)
清水 Water 25g (5 teaspoon)
Pre-starching: Blend corn starch with water and add into chicken juliennes. Massage until all liquid absorbed.
裹粉 Coating Mix:
低筋面粉 All-purpose Flour 50g (1/4 Cup)
玉米淀粉 Corn Starch 50g (1/4 Cup)
小苏打 Baking Soda 3g (1/2 teaspoon)
Coating: Combine three dry ingredients together and mix well. Drop the pre-starched chicken juliennes into coating mix and massage until chicken is evenly coated.
炸油 Frying Oil:
菜籽油 Canola Oil 1.5L
Frying: Pre-heat frying oil to 375F. Fry chicken juliennes until they turn into light golden color.
调味粉 Homemade Spice Mix:
小茴香 Fennel Seed 10g
黑胡椒 Black Peppercorn 4g
八角 Anise Star 2.5g
桂皮 Cinnamon 2.5g
山奈 (沙姜) Kencur 1.5g
丁香 Clove 1g
香叶 Dried Bay Leaf 1g
姜粉 Ginger Powder 1.5g
蒜粉 Garlic Powder 3g
洋葱粉 Onion Power 3g
海盐 Sea Salt 10.5g
红糖 Brown Sugar 16g
Flavoring: Sprinkle our homemade spice mix onto fried chicken julienne. Enjoy!
