Recipes:
Grilled Shrimp in a Sundried Tomato Sauce
Serving Size: 4 – 6
¼ cup balsamic vinegar
2 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon black pepper
¾ cup vegetable oil
1 cup sundried tomatoes, finely chopped
1 tablespoon garlic, minced
1 tablespoon minced jalapenos
2 pounds large shrimp, boiled, peeled and deveined
Combine all ingredients except shrimp in a mixing bowl and stir until well mixed. Add shrimp and toss well to make sure the shrimp is coated. Refrigerate in marinade for 4 hours. Serve with toasted French bread or crackers.
Heirloom Tomato and Avocado Salad
Serves 4 – 6
4 large Heirloom Tomatoes, sliced (any color you prefer)
2 large Haas Avocados, peeled, seed removed and sliced
6 – 8 leaves fresh Basil
½ cup Extra Virgin Olive Oil
¼ cup Red Wine Vinegar
Sea Salt
Cracked Black Pepper
Arrange tomato slices on a tray and garnish with avocado slices and basil. Drizzle with olive oil, red wine vinegar and season with salt and pepper.
Refrigerate until ready to serve.
