Rava Pongal Recipe:
Moong Dal - ¼ Cup
Water - 1 Cup
Rava (Roasted) - ½ Cup
Ghee - 2 tbsp
Cumin Seeds - 1 tsp
Curry Leaves - 1 Sprig
Cashew Nuts (whole) - 10 nos
Water - 1 ½ Cups
Salt - 1 ½ tsp
Black Peppercorns - ½ tsp
Ginger (finely chopped) - 1 tsp
Asafoetida (Hing) - A Pinch
Cooking Instructions:
1. Lightly roast the moong dal until aromatic but not browned and wash them well.
2. Transfer to a cooker with water and cook for 4 whistles.
3. Allow the steam to release and mash the dal and set aside.
4. In a kadai, heat ghee and add the cumin seeds. Saute until aromatic and add the cashew nuts. Allow them to turn golden brown.
5. Add the curry leaves, ginger, peppercorns and hing. Mix well and add the water.
6. Allow the water to come to a boil. Season with salt.
7. Add the rava in portions and mix well in between each addition to prevent lumps.
8. Once all the rava has been mixed in, add the mashed dal and mix well.
9. Allow the rava pongal to thicken slightly and serve warm.
Cooking Tips:
1. Roast the rava until aromatic but not browned, if raw.
