Ingredients
1 cup lentil pasta (or any pasta)
1½ cups cooked chickpeas
½ cup cashews (soaked 20 min in warm water)
2 cups coconut milk (or any plant milk)
¼ cup nutritional yeast
1 tbsp olive oil
½ cup sliced onions
3 garlic cloves (grated)
1 tbsp tomato paste
½ cup chopped broccoli
½ cup sliced red bell pepper
¼ cup sun-dried tomatoes (with oil)
1½ tsp Cajun spice
2 tsp smoked paprika
4 cups baby spinach
¼ cup chopped parsley (optional)
1 tbsp lemon juice
Salt & black pepper to taste

Method:
1. Cook pasta according to package instructions.
2. Blend sauce: Drain soaked cashews. Blend with nutritional yeast and coconut milk until smooth.
3. Sauté veggies: Heat olive oil, cook onions and garlic until fragrant. Add tomato paste, broccoli, bell pepper, sun-dried tomatoes, Cajun spice, smoked paprika, and salt.
4. Combine: Add chickpeas, cooked pasta, and cashew sauce. Mix well.
5.Finish: Stir in spinach and cook until wilted. Add parsley, lemon juice, and black pepper. Let sit 5 minutes before serving.
