Ingredients:
Small capsicums – 4 to 5 (tops cut and seeds removed)
Oil – 3 tbsp
Asafoetida – 1/4 tsp
Cumin seeds – 1 tsp
Onion – 3 (finely chopped)
Tomatoes – 3 (blended with ginger and garlic)
Ginger – 1-inch piece
Garlic – 4-5 cloves
Salt – as per taste
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tbsp
Garam masala – 1/2 tsp
Amchur (dry mango powder) – 1/2 tsp
Fresh cream – 2 tbsp
Fresh coriander – for garnish
Kasuri methi – 1 tsp
For Chaas (Buttermilk):
Curd – 1 cup
Mint leaves – a handful
Ginger – 1/2 inch piece
Green chili – 1
Salt – as per taste
Process:
Prepare the Capsicum:
Take the small capsicums and cut off the tops.
Using a spoon, carefully remove all the seeds.
Heat oil in a pan, add the capsicums, sprinkle a little salt, and fry for 3-4 minutes. Set aside.
Prepare the Masala Filling:
In another pan, heat oil, add asafoetida and cumin seeds.
Add finely chopped onions and sauté until they turn soft.
Add salt, red chili powder, turmeric, coriander powder, garam masala, and amchur.
Mix well and let it cook for 2-3 minutes.
Your spicy potato mixture is ready.
Prepare the Gravy:
In a mixer, blend tomatoes, ginger, and garlic to a smooth paste.
In the same pan, add a bit more oil, and pour the blended mixture.
Sauté for 5-7 minutes. Add a bit of hot water to adjust consistency.
Cover and cook for another 5-7 minutes.
Add 2 tablespoons of yogurt and cook for another 3-4 minutes.
Finally, add 2 tablespoons of fresh cream, mix well, and cook for 4-5 minutes until it thickens.
Assemble the Dish:
Stuff the fried capsicums with the prepared spicy potato filling.
Place them gently into the gravy, cover, and cook for 7-8 minutes on low flame.
Garnish:
Garnish with fresh coriander, kasuri methi, and a bit of fresh cream.
Chaas Preparation:
Blend curd, mint leaves, ginger, green chili, and salt in a mixer.
Serve chilled alongside the Bharwa Shimla Mirch.
Pack the Tiffin:
Serve the Masaledar Bharwa Shimla Mirch with hot parathas and refreshing chaas in your office tiffin.
