ingredients:
For Marinated Bhindi:
500g bhindi (okra) – washed, dried, slit and cut
½ tsp salt
1 tsp Kashmiri red chilli powder
½ tsp turmeric powder
1 tbsp lemon juice
½ cup besan (gram flour)
For Frying Bhindi:
1 tbsp oil
1 medium onion – chopped into cubes (for frying separately)
For Onion-Tomato Masala:
2 tbsp oil
A pinch of hing (asafoetida)
1 tsp cumin seeds
2 green chillies – slit
1 tsp ginger – julienned
2 onions – finely chopped
Salt to taste
½ tsp Kashmiri red chilli powder
½ tsp turmeric powder
1½ tsp coriander powder
2–3 tbsp water
3 tomatoes – pureed
2 tbsp curd (whisked)
½ tsp garam masala
Fresh coriander leaves – chopped
Process:
Prepare Bhindi:
Wash, dry, slit, and cut bhindi.
Add salt, Kashmiri red chilli, turmeric, and lemon juice. Mix well.
Add besan and coat all the bhindi evenly.
Set aside for marination.
Fry Bhindi:
Heat oil in a pan, add the marinated bhindi, and shallow-fry for 10–12 minutes till crispy and golden. Keep aside.
Crispy Onion:
In a separate pan, add a little oil and fry cubed onions till slightly browned. Set aside.
Prepare Gravy:
In another kadhai, heat oil, add hing, cumin seeds, green chillies, and julienned ginger.
Add chopped onions and sauté until golden brown.
Add salt, red chilli, turmeric, and coriander powder.
Splash some water and cook for a minute.
Add pureed tomatoes and cook until 50% done.
Add curd gradually, stirring continuously. Cook for 7–8 minutes on low heat.
Combine Everything:
Add fried onions, fried bhindi, garam masala, and chopped coriander to the masala.
Mix gently and cook for 2–3 minutes for flavors to meld.
Serving Suggestion:
Perfect for office tiffin with hot phulkas or jeera rice. Crunchy outside, masaledar inside!
