Easy to make Vegan Menudo food for the soul: Venudo

Veynewdoh!! Venudo! Taste so nice I named it twice! This is a traditional Mexican dish that has been evolved into a more earth, animal, and heart friendly dish. No lard, no cow intestines, no saturated fat , no way! Have you ever wanted to eat menudo but couldnt stand the smell or taste? Well here it has evolved into a revolutionize revolutionary menudo that is packed with flavors ready to appease any vegan or carnivore taste buds. Enjoy!!
INGREDIENTS: 1 can hominy; 2 cups of TVP (Textured vegetable protein) ; 6 guajillos chilis (chilli pods) ; 4 Anchos; 4 arbols (chili peppers); 1 large onion; 6 garlic cloves; 1-2 tablespoon salt; 2 vegetable bouillon cubes or 32 oz vegetable stock; 2 bay leaves; 1 tsp cumin; palm or pinch of oregano.
First step: Put TVP in large bowl and fill up with hot water set aside.
CHILI SAUCE: Steep chili ,onion, and garlic in pre-boiled water for 30 min. Place these ingredients in blender with the same water and blend well. ( in this video, I had to blend a few times because my blender was so little) now, drain the sauce from chili over a funnel and into a bowl. discard the chunky leftovers.
NEXT STEP: IN a large part , heat up 1/4 cup to 1/2 cup of oil , then pour in chili liquid sauce, pour in 32 oz vegetable broth and fill up rest of pot with water (not all the way leave some room to add the hominy and TVP) add salt, cumin, chili flakes, and bay leaves. If you are adding bouillon cubes instead of broth then go ahead and add the cubes here. Bring this to a boil , then lower heat and simmer for 20 minutes.
FINAL STEP: Place hominy in the simmering water for another 10 minutes. Now just add the TVP and its ready to eat.
