Matcha Avalanche Cake! Or Matcha Lava Cake! Whatever you want to call it -- it's a soft, light, and fluffy matcha sponge cake, topped off with lightly whipped matcha cream and finished with matcha powder.
I made this cake twice but with 2 different cream consistencies to test out the different avalanche/lava action. Let me know which version you prefer!

***Ingredients***:
Matcha Sponge Cake:
3 large egg yolks
50g milk
30g oil (veg/corn oil)
50g flour
3 tsp matcha
3 large egg whites
50g sugar
Whisk together egg yolks, milk and oil. Sift in flour and matcha powder and whisk it all together. In a separate bowl, whisk egg whites together and gradually add sugar in thirds until soft peaks form.
Bake in a 6 inch cake pan lined with parchment paper and place in a hot water bath before placing it in the oven at 320°F for 25 mins, then 300°F for another 10 mins.
Matcha Avalanche/Lava Cream:
1 cup cream
1/4 cup sugar
3 tsp matcha
Whip all ingredients together until SLIGHTLY thickened for a runny consistency.
