Ingredients:
1 Cup (225g) Light Cottage Cheese (The secret ingredient!)
3 Ripe Bananas (Mashed)
3 Large Eggs
1 Cup (125g) All-Purpose Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
Splash of Vanilla Extract
Honey or Maple Syrup (to taste)
Optional: Splash of water if the cottage cheese is too thick.
Instructions:
Blend the cottage cheese until completely smooth.
In a bowl, mash the bananas and mix with eggs, vanilla, and honey.
Add the baking soda and baking powder.
Pour in the blended cottage cheese and mix well.
Fold in the flour gently.
Bake at 350°F (175°C) for 50-60 minutes.
Let it cool and enjoy!
