Fresh, crunchy Korean Scallion Kimchi (Pa-Kimchi) made with anchovy fish sauce and a light sweet rice paste.
Spicy, savory, and incredibly addictive — perfect as a side dish with rice or grilled meat.
✨ Ingredients
Scallions 600 g (21.1 oz / 1 bunch)
Anchovy fish sauce ½ cup
Seasoning
Gochugaru (Korean chili flakes) 7 tbsp
Plum syrup 1 tbsp
Sugar 1 tbsp
Minced garlic 1 tbsp
Sweet Rice Paste
Sweet rice flour 1½ tbsp
Anchovy kelp stock 1 cup
👩🍳 How to Make
Cook the sweet rice paste over medium heat until thickened. Let cool.
Lightly salt scallions with anchovy fish sauce for 20 minutes.
Mix remaining fish sauce with rice paste and seasonings.
Spread seasoning from roots to leaves.
Rest at room temperature for half a day, then refrigerate.
