Samgyeopsal (Pork Belly) Roll with Minari 🌿🥓
A refreshing twist on classic Samgyeopsal (pork belly)!
Juicy pork belly butterflied and rolled with aromatic minari (water dropwort), then baked to perfection and served with a spicy ssamjang mayo sauce. Perfect for K- BBQ nights, dinner parties, or a unique Korean-inspired main dish.
Ingredients
Pork belly 500 g (17.64 oz)
Minari (water dropwort) 200 g (7.05 oz)
Cooking oil 1 tbsp
Salt 0.5 tbsp
Black pepper 0.3 tbsp
Sauce
Mayonnaise 3 tbsp
Ssamjang 2 tbsp
Oligodang syrup 1 tbsp
Cheongyang chili pepper, minced 2 tbsp
Steps
Trim minari, soak in vinegar water, rinse, and drain.
Butterfly pork belly, season with salt and pepper.
Place minari on pork belly, roll tightly like kimbap, brush with oil.
Skewer to hold, bake at 190°C (375°F) for 30 min.
Mix mayo, ssamjang, syrup, and minced chili for sauce.
Slice samgyeopsal rolls, serve with spicy ssamjang mayo.
