Leek & Bean Cassoulet:
2 Yukon gold potatoes, cut into 1/2 inch dice
3 cups vegetable broth
3 tbsp cornstarch
2 tbsp olive oil
2 leeks, washed well and sliced thinly
1 small onion, diced
1 1/2 cups carrots, peeled and cut into 1/2 inch dice
2 cloves garlic, minced
1 heaping tbsp chopped fresh thyme
several pinches black peppers
1/2 tsp salt
3/4 cup frozen peas
1 (15 oz) can navy or white beans, drained/rinsed
Biscuits:
3/4 cup plain soy milk
1 tsp apple cider vinegar
1 1/2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 cup vegan shortening
