Roasted Brussels Sprouts:
1 lb. Brussels sprouts
Extra Virgin Olive Oil, for drizzling
sea salt and freshly ground black pepper, to taste

Lemon-Thyme Almesan Roasted Brussels Sprouts:
1 lb. Roasted Brussels Sprouts Recipe above
1 tbsp lemon juice
1 tbsp Almesan (recipe below)
1 tbsp fresh thyme leaves
1/4 cup parsley leaves (optional)
pinch of red pepper flakes (optional)
lemon wedges, for garnish

Almesan Recipe (Vegan Parmasan):
1/4 cup slivered/sliced almonds
1 tbsp toasted sesame seeds
1/8 tsp salt
1/4 tsp lemon zest

Shredded Brussels Sprout & Cranberry Salad:
4 cups shredded Brussels sprouts (approx. 1/2 lb. Brussels sprouts)
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/2 cup pine nuts or hazelnuts (I recommend toasted!)
1/3 cup dried cranberries
1/3 cup grated/shredded vegan mozzarella or light flavored cheese
1/3 cup chopped chives
sea salt and freshly ground black pepper to taste

Shiitake Bacon & Roasted Brussels Sprouts:
1 lb. Roasted Brussels Sprouts Recipe above
8 oz. shiitake mushrooms, stemmed and sliced to 1/4 inch width
2 tbsp extra virgin olive oil
1 tbsp + 1 tsp tamari, divided
1/2 tsp sesame oil
1 tbsp rice vinegar
1 tbsp sesame seeds
