These are delicious and chocolaty cookie with a hint of spiciness from cayenne pepper and cinnamon. The spiciness from the cookies and sweetness from dulce de leche will party in your tastebuds.

Ingredients:
Dulce de Leche
1 can condensed milk
water for boiling
1. Remove the label from the can.
2. Place the can in a deep pot and fill it with (hot) water. The water should be two inches above the can. The can should be completely submerged in the water.
3. Bring the water to boil over high heat.
4. When the water is boiling lower the heat to med-high heat and start your timer. Simmer for 3 hours.
5. Keep an eye as the water tends to evaporate. Add water as necessary. The can should be completely submerged.
6. After 3 hours of boiling, turn off the heat and remove the can from the water and let it cool completely. Do not be tempted to open it, it might explode because of the pressure inside the can.
Spiced chocolate cookies
136g bittersweet chocolate, chopped
60g butter
1 egg (62g) L
110g brown sugar
33g white sugar
83g all purpose flour
13g cocoa powder
2g baking powder
2g salt
3g cornstarch
1 tsp cinnamon powder
1/8 - 1/4 tsp cayenne pepper powder
salt (I used rock salt) optional
1. Sift all dry ingredients. Set aside
2. Melt the butter and the chocolate in the microwave with 30 secs increment or double broiler. Set aside and let it cool.
3. Whisk the egg and sugar until fluffy and light in color.
4. Add in the melted chocolate. Stir well.
5. Fold in the dry ingredients.
6. Chill in the fridge for 30 minutes.
7. Preheat the oven to 350F
8. Scoop the cookie dough (I used 1 tablespoon) and place it on a lined baking sheet. Space between the cookies should be two inches. Sprinkle some salt on top, (this is optional).
9. Bake it for 10-12 minutes.
10. Rest the cookies in the pan for 15-20 minutes. Then transfer them to a wire rack to cool completely.
11. Spread a generous amount of dulce de leche on one cookie and top with another cookie.
12. Enjoy!
